Assam’s Bay Leaf, known locally as Tezpat, is a highly aromatic spice used in curries, biryanis, and spice mixes. It is primarily grown in Tezpur, Sonitpur, and Goalpara districts.
Unlike the Mediterranean bay leaf, Assam’s variety comes from the Cinnamomum tamala tree and has a spicy, cinnamon-like flavor. It’s also used in Ayurvedic medicine for its antimicrobial and digestive properties.
