The King Chilli, locally called Bhoot Jolokia, is one of the hottest chillies in the world and a symbol of Assam’s fiery cuisine. Cultivated in Upper Assam, Dibrugarh, and Tinsukia, it has a smoky flavor and extreme heat, making it popular for pickles, chutneys, and hot sauces.
In 2007, it was recognized as the world’s hottest chilli by the Guinness World Records. Despite its heat, it’s also known for its distinct smoky aroma and health benefits — including pain relief and metabolism boost.
